Spicy Thai Noodle Bowl Recipe

Ingredients:

  1. 8 oz spaghetti noodles (or rice stick noodles or linguine)
  2. 1 stalk green onions, chopped
  3. 4 tablespoons cilantro, roughly chopped
  4. 1/2 cup peanuts, roasted and roughly chopped
  5. 1/2 cup shredded cabbage
  6. 1/2 cup shredded carrots
  7. 1 tablespoon sesame oil
  8. 1/2 yellow onion, sliced
  9. 1 inch fresh ginger, diced
  10. 2-3 cloves garlic, minced
  11. 1 tablespoon soy sauce
  12. 1 teaspoon rice vinegar
  13. 1-2 tablespoons red pepper flakes (adjust according to your preference)

Instructions:

  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the sliced onion, diced ginger, and minced garlic. Sauté until the onions are translucent and the ginger and garlic are fragrant.
  3. Add the shredded cabbage and carrots to the skillet. Stir fry until the vegetables are tender.
  4. Add the cooked noodles to the skillet along with the soy sauce and rice vinegar. Toss everything together to combine.
  5. Sprinkle the red pepper flakes over the noodle mixture. Stir well to distribute the heat.
  6. Garnish the noodle bowl with chopped green onions, cilantro, and roasted peanuts.
