Mediterranean Stuffed Bell Peppers Recipe

Ingredients:

  1. 4 large bell peppers (red, yellow or orange, or a mix)
  2. 1 cup cooked brown rice (or substitute with white rice, quinoa, freekeh, farro, or bulgur)
  3. 1/2 lb lean ground turkey or ground beef
  4. 1 small yellow onion, chopped
  5. 1 tablespoon finely chopped garlic
  6. 1 teaspoon Italian seasoning
  7. Greek extra virgin olive oil
  8. Kosher salt and black pepper
  9. Optional additions: sun dried tomatoes, cherry tomatoes, green olives, chickpeas, feta cheese, spinach

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove the seeds. Place the peppers in a baking dish and drizzle with olive oil. Sprinkle with kosher salt and black pepper.
  3. Heat a large skillet over medium heat. Add the chopped onions and sauté until they become translucent.
  4. Add the ground turkey or beef to the skillet. Cook until it’s no longer pink. Add the garlic and Italian seasoning and cook for another minute.
  5. Stir in the cooked rice and any optional additions (sun dried tomatoes, cherry tomatoes, olives, chickpeas, etc.) you’d like to include. Cook for a few more minutes until everything is well combined. Adjust seasoning if needed.
  6. Spoon the mixture into each bell pepper cavity. If you’re including feta, sprinkle it on top now.
  7. Cover the baking dish with foil and bake for 25-30 minutes. Then remove the foil and bake for another 15-20 minutes, until the peppers are tender and the filling is heated through.
