Mediterranean Stuffed Bell Peppers Recipe
Ingredients:
- 4 large bell peppers (red, yellow or orange, or a mix)
- 1 cup cooked brown rice (or substitute with white rice, quinoa, freekeh, farro, or bulgur)
- 1/2 lb lean ground turkey or ground beef
- 1 small yellow onion, chopped
- 1 tablespoon finely chopped garlic
- 1 teaspoon Italian seasoning
- Greek extra virgin olive oil
- Kosher salt and black pepper
- Optional additions: sun dried tomatoes, cherry tomatoes, green olives, chickpeas, feta cheese, spinach
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the peppers and remove the seeds. Place the peppers in a baking dish and drizzle with olive oil. Sprinkle with kosher salt and black pepper.
- Heat a large skillet over medium heat. Add the chopped onions and sauté until they become translucent.
- Add the ground turkey or beef to the skillet. Cook until it’s no longer pink. Add the garlic and Italian seasoning and cook for another minute.
- Stir in the cooked rice and any optional additions (sun dried tomatoes, cherry tomatoes, olives, chickpeas, etc.) you’d like to include. Cook for a few more minutes until everything is well combined. Adjust seasoning if needed.
- Spoon the mixture into each bell pepper cavity. If you’re including feta, sprinkle it on top now.
- Cover the baking dish with foil and bake for 25-30 minutes. Then remove the foil and bake for another 15-20 minutes, until the peppers are tender and the filling is heated through.
