Hearty Vegetable and Lentil Soup

Ingredients:

  1. 2 tablespoons olive oil
  2. 1 large onion, chopped
  3. 2 carrots, peeled and diced
  4. 2 celery stalks, diced
  5. 3 cloves garlic, minced
  6. 1 teaspoon dried thyme
  7. 1 teaspoon dried oregano
  8. 1 cup dried lentils (green or brown)
  9. 1 (14.5 oz) can diced tomatoes
  10. 6 cups vegetable broth
  11. Salt and pepper to taste
  12. 2 cups chopped kale or spinach
  13. Fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until the vegetables are softened, about 5 minutes.
  2. Add the garlic, thyme, and oregano to the pot. Cook for another minute, stirring constantly to prevent the garlic from burning.
  3. Stir in the lentils, diced tomatoes (with their juice), and vegetable broth. Season with salt and pepper. Bring the soup to a boil.
  4. Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the lentils are tender.
  5. Stir in the chopped kale or spinach. Let the soup cook for another 5-10 minutes, or until the greens are wilted.
  6. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
