Hearty Vegetable and Lentil Soup
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup dried lentils (green or brown)
- 1 (14.5 oz) can diced tomatoes
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- Fresh parsley for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until the vegetables are softened, about 5 minutes.
- Add the garlic, thyme, and oregano to the pot. Cook for another minute, stirring constantly to prevent the garlic from burning.
- Stir in the lentils, diced tomatoes (with their juice), and vegetable broth. Season with salt and pepper. Bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the lentils are tender.
- Stir in the chopped kale or spinach. Let the soup cook for another 5-10 minutes, or until the greens are wilted.
- Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
