Classic Chicken Piccata Recipe

Ingredients:

  1. 2 boneless skinless chicken breasts, halved horizontally
  2. Salt and freshly ground black pepper
  3. 1/2 cup all purpose flour
  4. 2 tablespoons olive oil
  5. 2 tablespoons unsalted butter
  6. 1/4 cup fresh lemon juice
  7. 1/2 cup chicken stock
  8. 1/4 cup brined capers, rinsed
  9. 1/4 cup fresh parsley, chopped

Instructions:

  1. Season chicken with salt and pepper, then dredge in flour and shake off excess.
  2. In a large skillet over medium high heat, heat the olive oil. When the oil is hot, add the chicken to the pan and cook for 3-4 minutes on each side until browned. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the butter. Once the butter has melted, add the lemon juice, chicken stock, and capers. Bring the sauce to a boil, scraping up any brown bits from the bottom of the pan.
  4. Return the chicken to the skillet and simmer for 5 minutes.
  5. Remove the chicken from the skillet, and continue to simmer the sauce for another 2-3 minutes until it thickens slightly.
  6. Spoon the sauce over the chicken, garnish with the fresh parsley, and serve.
