Classic Chicken Piccata Recipe
Ingredients:
- 2 boneless skinless chicken breasts, halved horizontally
- Salt and freshly ground black pepper
- 1/2 cup all purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/4 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/4 cup fresh parsley, chopped
Instructions:
- Season chicken with salt and pepper, then dredge in flour and shake off excess.
- In a large skillet over medium high heat, heat the olive oil. When the oil is hot, add the chicken to the pan and cook for 3-4 minutes on each side until browned. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the butter. Once the butter has melted, add the lemon juice, chicken stock, and capers. Bring the sauce to a boil, scraping up any brown bits from the bottom of the pan.
- Return the chicken to the skillet and simmer for 5 minutes.
- Remove the chicken from the skillet, and continue to simmer the sauce for another 2-3 minutes until it thickens slightly.
- Spoon the sauce over the chicken, garnish with the fresh parsley, and serve.
